Beef chuck roast seasoned with Sure Fire BBQ Smoked Taco Seasoning on pellet smoker

Southwest Beef Tacos

Besides being packed with flavor and beautiful to look at, this chuck roast delivers some of the best tacos you've ever had.

    Prepare your grill, smoker, or cooker to 250 degrees. We prefer a pellet grill for this cook and used a Traeger Ironwood XL set at 250 and then turned it up to 275 when wrapping. A foil steam pan (half), heavy duty aluminum foil, and an instant read thermometer are needed.

Step 1:

Trim any excess fat around the roast, slather with hot sauce as a binder, and season with Sure Fire Smoked Taco Seasoning

Step 2:

Place the chuck roast on the grill and smoke until it reaches an internal temperature of 170 with an instant read thermometer. 

Step 3:

Once the internal temperature reaches 170, remove and set in a foil steam pan. Top with the butter, beef broth, and Smoked Taco Seasoning. Wrap tightly and return to the smoker until the internal temperature reaches 205. 

Step 4:

Remove chuck roast from the smoker and let rest for at least 30 minutes. Shred the meat and build tacos with your desired condiments.
