Bite-Sized Bliss

This classic appetizer is creamy, crispy, and packed with flavor. Mixed and topped with AP Seasoning, these poppers are always an instant hit. 

ingredients

  • 15 - 20 medium jalapeños
  • 1 pack standard cut bacon
  • 8 oz package cream cheese 
  • 8 oz shredded sharp cheddar cheese
  • Sure Fire AP Seasoning 
  • Gear

    Prepare your smoker or cooker to 275 degrees. This is an easy recipe and cook so not much gear is needed. A few bowls and a set of nitrile gloves will be helpful during the preparation.

Step 1:

After washing, cut the jalapeño stems and slice lengthwise down the center. Using a spoon, scrape the inside of the peppers, including the seeds and membrane, until mostly clean. Leave some of the seeds or membrane if you prefer more heat. Cover and set aside in a bowl. 

Step 2:

Mix cream cheese, cheddar cheese, and AP Seasoning until well combined. We like to mix by hand with gloves to make this step easier, even with the cheese softened. This helps ensure an even mixture of cheese and seasoning. 

Step 3:

Spoon the cheese mixture into each jalapeño, being careful not to overflow. Next, wrap each jalapeño with a half piece of bacon ensuring to cover all sides and the length of the pepper. The thinner bacon works best to stretch and doesn't take as long to render during the cook. Season all sides with AP Seasoning. 

Step 4:

Smoke or cook at 275 - 300 degrees until the bacon is rendered and the filling has turned a darker golden color and is bubbling. This is typically around the 60 - 90 minute mark. 

Step 5:

Remove from cooker and let rest for 5 - 10 minutes before serving warm.
