Prepare your grill, smoker, or cooker for 250 degrees. We used a Traeger Ironwood XL for this cook and turned the temperature up to 275 when wrapping. A foil steam pan (half), heavy duty aluminum foil, and an instant read thermometer are needed.

Step 1:
After trimming any loose or excess fat, coat with a layer of yellow mustard and season with Sure Fire Beef Rub. Let rest 15 minutes before adding to smoker.
Step 2:
Place the chuck roast on the grill and smoke until it reaches an internal temperature of 170 with an instant read thermometer. Spritz every hour or two with apple juice or apple cider vinegar to continue building bark and avoid drying.
Step 3:
Once the internal temperature reaches 170, remove and set in a foil steam pan. Top with the butter, beef broth, and Beef Rub, Wrap tightly and return to the smoker until the internal temperature reaches 205.
Step 4:
Remove chuck roast from the smoker and let rest for at least 30 minutes. Using a fat separator and a sieve, remove excess fat from the broth and strain through so that the broth is completely smooth. Toast slider rolls and assemble with your desired condiments.

Used this for the first time this weekend on some chicken legs. Mixed the chicken in a bowl with the lemon pepper, a little oil and lemon juice. Quick toss and into the grill. Entire family devoured them. Had zero left. Can’t wait to try on some wings this football season. Highly recommended!!!!
I have used this on several items but my favorite item to use this on is popcorn. Has great taste and is a great all purpose seasoning that everyone should have on their spice rack!!
