Marinated in pickled jalapeños with green chiles, these boneless, skinless chicken thighs are juicy and perfect for a sandwich.

Prepare your grill or smoker for high heat. We used Jealous Devil charcoal in a Weber Kettle for this fast cook. A large bag for marinating and an instant read thermometer are also needed.

Step 1:
Trim any excess fat from the thighs and place in a large sealable bag. Pour in 2 - 3 tbsp of Sure Fire Fajita Seasoning, the entire can of pickled jalapeños, green chilies, and marinate for up to 24 hours. 24 hours will produce a spicier bite.
Step 2:
Prepare your grill for high direct grilling. Remove chicken from marinade, pat dry, and season with Sure Fire Fajita Seasoning. Allow seasoning to adhere for 10 minutes. Place chicken directly over high heat and begin grilling.
Step 3:
Grill over high heat, turning and flipping consistently, until all pieces are evenly cooked and have developed some char. Remove from the heat once internal temperature has reached 165 in the thickest part of the meat.
Step 4:
Add cheese to the chicken and allow to melt while you toast the buns on the grill. Use a light spread of butter and toast until golden brown.
Step 5:
Once the cheese has melted, remove the chicken and use on top of the toasted buns to build a sandwich and enjoy.

Used this for the first time this weekend on some chicken legs. Mixed the chicken in a bowl with the lemon pepper, a little oil and lemon juice. Quick toss and into the grill. Entire family devoured them. Had zero left. Can’t wait to try on some wings this football season. Highly recommended!!!!
I have used this on several items but my favorite item to use this on is popcorn. Has great taste and is a great all purpose seasoning that everyone should have on their spice rack!!
